El puente de la Constitución de 1812 is a striking cable-stayed bridge crossing the Bay of Cádiz. It links the city of Cádiz with the mainland. This bridge is the third main access to Cádiz, after the San Fernando isthmus and the Carranza bridge. It opened in September 2015 and quickly became Spain’s longest cable-stayed span at 540 meters.

“The culinary masterpiece of Michelin Star Restaurant Vandelvira in Baeza is a symphony of flavors that enchants the senses and captures the essence of gastronomic perfection.”
Vandelvira: A Feast for the Senses in a 16th-Century Monastery
In the historic heart of Baeza, where grand Renaissance buildings and cobblestone streets set the scene, you'll find Vandelvira. Not just any restaurant, but a fine dining experience housed in a former monastery. Step through the doorway and swap the buzz of the plaza for serene cloistered walkways, whitewashed walls, and graceful arches that whisper of centuries past — all while sipping a glass of manzanilla sherry.
A Chef with a Vision
At the helm is Juan Carlos García, a young chef with a clear mission: to cook with whatever the garden and the local region offer. There’s no menu to choose from — only one thoughtfully curated tasting menu. The focus is on simplicity, creativity, and deep respect for ingredients. No frills in the kitchen, just refined techniques.
Produce from His Own Soil
What lands on your plate was often harvested that very morning. Many vegetables and herbs come from García’s own garden, just a short walk from the restaurant. Think smoked buttered eggplant or zucchini flower with almond cream. Every dish is a quiet tribute to the landscapes of Jaén.
Squid in Dashi
One of his signature creations? Squid with Iberian ham in a concentrated ham-dashi broth. Salty, umami-rich, with a subtle smokiness — balanced without overpowering. A perfect example of how simplicity can surprise when you treat ingredients with care.
More Than a Meal
Vandelvira isn’t for a quick bite or tourist-friendly set menu. It’s an experience where every detail matters: the acoustics of the monastery, the play of light beneath the arches, the rhythm of courses that gently guide the meal. You arrive as a guest, and leave feeling fully immersed in Andalusian gastronomy.
For those who want to taste Andalusia at its most refined, Vandelvira is not to be missed.
