The origins of this beloved dish go back further than most people think. For years, the story went that General Zumalacárregui invented the tortilla during the First Carlist War in 1835. He needed something cheap and filling for his soldiers. A local farmer came up with the idea.
But research in 2008 told a different story. Food historian Javier López Linage traced the recipe back to Villanueva de la Serena, Extremadura, in 1798. And journalist Ana Vega found written proof that omelets with potatoes were already around in 1767.
Straightforward, yet full of flavour
