Ángel León: The Scientist in the Kitchen

This chef is called “el Chef del Mar” (The Chef of the Sea) for good reason. What he does with fish, plankton, and even seawater is more like laboratory work than traditional cooking. At Aponiente, you'll find dishes like bioluminescent shrimp, seaweed sausages, and desserts with moray eel on the menu. Exciting? Absolutely. But above all, brilliantly executed and perfectly balanced.

The kitchen uses ingredients often overlooked by traditional cuisines. Instead of the usual tuna or shrimp, León opts for fish species that usually end up as bycatch. No waste, no overfishing—just creative use of what the sea truly offers.
